Parmesan Encrusted Cod Loin


A simple way to prepare cod that is so tasty ! The paresean mixed with the garlic breadcrumbs pairs so perfectly with the white meat of a fresh cod fillet will definately have you coming back for more!


2 Lbs Cod Loin
2 Green Peppers
1 Onion
1 Small Container Mushrooms
1 Garlic Clove
1 cup Roasted Garlic Breadcrumbs
2 Eggs
1 Packet of Sazon Adobe


1.) Preheat the oven to 350.

2.) Cut the cod loin in manageable pieces.

3.) Beat 2 eggs add packet of sazon and sprinkle adobo into egg mixture. After soaking fillets in the egg mixture dredge fillets in roasted garlic breadcrumbs.

4.) Cut the green peppers, onions, mushrooms, and garlic then layer it in bottom of the baking pan. Add cod fillets to the top. Sprinkle parmesan cheese over the top.

5.) Place into oven for 10-15 minutes, open oven and flip fillets, sprinkle again with parmesan cheese and return to oven for another 10-15 minutes. Pull from oven and let stand for 5 minutes.

6.) Fish should be flaky. Serve with rice and enjoy.
